Homemade Chicken Roll: The Recipe That Will Make You Say Goodbye to Store-Bought Ones (Forever!)

Ingredients
  

  • 1 UN Egg Whole
  • 3 UN Chicken breasts Minced
  • 1 UN Onion finely chopped
  • 2 UN Garlic cloves finely chopped
  • 1 tbsp Mustard (I have used Dijon)
  • 6 tbsp breadcrumbs (note: if you use more than 7 tbsp, the roll will turn out dry!)
  • 6 slices Flamengo cheese or mozzarella
  • 6 SLICES porchetta ham, salami, or prosciutto—whatever you have on hand and whatever your heart desires
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 180°C. This is the perfect time to prepare everything at your own pace. Enjoy!
  • Prepare the meat mixture. In a large bowl, combine the chopped chicken, onion, garlic, egg, mustard, and breadcrumbs. Season with salt and pepper to taste and mix well until you have a smooth mixture.
  • Spread it on the baking sheet. Line a baking sheet with parchment paper and spread the mixture evenly. Important note: don’t make the layer too thin—if it’s too thin, the roll will break when you try to roll it up, and that’s when the stress really sets in.
  • Add the filling. Cover one end of the meat with cheese, and top it with the porchetta (or your chosen filling). This is where you can get creative!
  • Roll it up carefully. Using the parchment paper, start rolling the meat from the stuffed end. The secret is to keep that first little tip tightly pressed so the filling doesn’t escape.   • Lightly flour it and change the parchment paper. Roll the log in a little breadcrumbs—nothing excessive, just enough so it doesn’t stick. Transfer to a clean sheet of parchment paper before baking.
  • Bake for 30 minutes. While the delicious aroma fills the house, prepare the sides: some crispy fries (Air Fryer, no question!) and a fresh salad. A luxurious dinner, in under an hour.
