Oven-Baked Frittata with Whatever You've Got

The frittata is Italy's answer to "what do I do with this?". It's a type of omelette that goes in the oven and comes out with an incredible texture — crispy on the outside, creamy on the inside.

Equipment

  • oven-safe frying pan

Ingredients
  

  • 4 un eggs
  • 150 gr mixed vegetables (pepper, spinach, courgette, cherry tomatoes, mushrooms)
  • 1 garlic clove
  • 50 gr grated cheese (optional)
  • Olive oil, salt, pepper and herbs to taste

Instructions
 

  • Preheat the oven to 180°C.
  • Sauté the vegetables in olive oil with garlic for 5 minutes until softened. Set aside.
  • Beat the eggs with salt, pepper and herbs. Add the sautéed vegetables and mix.
  • Pour everything into an ovenproof non-stick pan and sprinkle with grated cheese.
  • Bake for 15–18 minutes until firm and golden.

Notes

Notes: If you don't have an ovenproof pan, transfer the eggs and vegetables to a small baking dish greased with olive oil before putting it in the oven — works just as well. For a richer version, add 2 tablespoons of cream or ricotta to the beaten eggs before pouring over the vegetables.
